DanDan Noodles

It was Sunday, raining in South California, and I had a craving some something comforting. When I realized I had all the makings for a dandan noodles dish, it was game time! This is a Chinese street food favorite that is savory, spicy and satisfying!

What are DanDan Noodles?

 DanDan noodles are thin noodles (like spaghetti) topped with minced pork and a leafy green vegetable, and tossed in a spicy and savory sauce.

DanDan noodles were named after the carrying pole (aka a dan dan) that street vendors used to carry the baskets of noodles and sauce.

Instructions

Make the Pork

  1. Mix all the ingredients for the pork except the green onions and let it marinate in a bowl or sealed plastic bag for at least 10 minutes. 

  2. Lightly coat the bottom of a skillet with cooking oil over medium-high heat. Add the pork mixture and sauté until fully cooked and moisture has evaporated. Add in green onions and cook for a few minutes or until tender. 

Make the sauce

  1. Combine all sauce ingredients in a bowl and set aside. Adjust seasoning as needed. 

Make the noodles and bok choy

  1. Cook noodles per package instructions. In the the last minute of cooking the noodles, add in the bok choy to blanch for 1 minute. Strain noodles and bok choy and set aside. 

  2. Assemble

    To serve, add noodles to a bowl along with a few bok choy leaves. Add in the sauce and pork mixture. Toss everything together to thoroughly coat noodles with sauce. Add more sauce if you prefer. Top with fresh peanuts and chopped green onions, and serve.
